Combine 2 1/2 cups flour, 1 tsp sugar, and 1/2 tsp salt in a heavy bottomed saucepan.
Add 1 cup of cold cubed butter and break it up into small pea-sized pieces.
Mix in 6 tbsp of ice water and 1 tbsp of vinegar until the dough forms.
Knead the dough by hand a few times, then divide into two balls and wrap in plastic wrap.
Chill the dough in the fridge for at least 30 minutes.
Roll out the dough to about 1/8 of an inch thick, rotating as you roll to maintain even thickness.
Cut the rolled dough into rectangles for the Pop-Tarts.
Make an egg wash by combining 1 egg with 1 tbsp of water and scrambling until smooth.
Place the pie dough on a lined baking sheet and brush the edges with egg wash.
Spread about 2 tbsp of strawberry jam on the dough, keeping it away from the edges.
Place a second piece of dough on top and gently press down along the edges.
Seal the edges with a fork and poke holes in the top for steam to escape.
Trim the edges for a neat appearance, if desired, and brush the tops with egg wash.
Bake in the oven at 375°F for 30 minutes or until golden brown.
While the tarts bake, make the strawberry glaze by mixing 1 cup of icing sugar, 2 tbsp of milk, and 1 tbsp of strawberry jam until smooth.
Let the tarts cool on a wire rack for about 20 minutes after baking.
Spread the strawberry glaze generously on the cooled tarts and add sprinkles before the glaze sets.
Let the decorated tarts cool for about 15 minutes to allow the glaze to set.
