Heat strawberries, white sugar, cornstarch, lemon juice, and lemon zest over medium low heat.
After a few minutes, mash the strawberries with a potato masher until fairly smooth with some chunks.
Turn the heat up to medium high and stir continuously until the mixture thickens and darkens slightly.
Remove from heat and transfer to a bowl, then chill in the fridge for about an hour.
Roll out the store-bought pie dough into a rectangle roughly 8 by 12 inches.
Cut the dough into 8 to 10 rectangular slices, ensuring each piece has a pair of similar size.
Transfer the slices to a cookie sheet lined with parchment paper and lightly brush with egg wash (beaten egg mixed with water).
Scoop roughly 1 tablespoon of strawberry filling into the center of each slice, spreading it out while leaving a quarter inch of empty space around the edges.
Place a matching piece of pie dough over the filling and use a fork to crimp the edges together, sealing them well.
Cut small slits in the top of each pop tart to allow steam to escape.
Refrigerate the assembled pop tarts for about 20 minutes.
Brush the chilled pop tarts with the excess egg wash.
Bake in a preheated 400 degree oven for 15 minutes or until golden brown.
Allow the pop tarts to cool down.
Combine 1 cup powdered sugar with 3 to 4 tablespoons heavy whipping cream and a splash of vanilla extract to make frosting.
Sift the powdered sugar beforehand to prevent lumps.
Drizzle icing over each cooled pop tart and gently spread it out, leaving space around the edges.
Add colorful sprinkles on top.
