Heat 1 cup of coconut milk in the microwave for 45 seconds, then an additional 15 seconds to reach the right temperature (105-115°F).
Add 2.5 teaspoons of active dry yeast and some sugar to the coconut milk, set aside to foam.
Add the remaining sugar and 1 egg to the mixture.
Melt butter and add it to the mixture along with the yeast.
Mix the ingredients by hand until a dough forms, adjusting with more flour or liquid as needed.
Knead the dough until smooth, then place it in a greased bowl with olive oil, cover, and let rise in the unlit oven for 1 hour.
Divide the dough into 8 portions, roll each into a ball, and flatten with a rolling pin.
Fold each flattened dough in half and place on a greased baking sheet.
Cover with shrink wrap and a cloth, let rise for 45 minutes.
Preheat the oven to 320°F and bake for 18-20 minutes, checking for doneness.
