Start by preheating the oven to 350°F (175°C).
In a bowl, combine 2 cups of all-purpose flour, 2 teaspoons of ground cinnamon, 1/4 teaspoon of ground cloves, 1 teaspoon of baking powder, and the zest of an orange. Whisk together.
In another bowl, mix 3/4 cup of light olive oil, 1 1/2 cups of granulated sugar, 2 teaspoons of pure vanilla extract, and 3 eggs at room temperature. Add 1/2 teaspoon of baking soda and 1/2 cup of plain yogurt, then whisk until combined.
Peel, core, and finely chop 2 apples for the cake. The third apple will be thinly sliced for the topping.
In a large bowl, combine the diced apples with 3/4 cup of walnuts, 1/4 cup of all-purpose flour, and toss everything together to coat.
Gradually add the dry ingredients to the wet ingredients in 2 or 3 batches, mixing carefully to avoid overmixing.
Fold in the apples and walnuts until just incorporated.
Prepare a 9-inch round springform pan by greasing it with olive oil or cooking spray. Place it on a baking pan to catch any leaks.
To make the streusel topping, combine 4 tablespoons of diced unsalted butter, 1/4 cup of tightly packed brown sugar, 1/2 cup of all-purpose flour, a pinch of salt, and 1 teaspoon of ground cinnamon in a bowl. Mix until crumbly, adding more butter if necessary.
Core and thinly slice the third apple, then tuck the apple slices into the batter in the pan.
Pour the batter into the prepared pan and smooth the top. Bake in the center of the oven for 1 hour and 30 minutes, checking at the 1-hour mark for doneness with a toothpick.
Once baked, let the cake cool in the pan for 30-40 minutes before transferring it to a serving platter.
Dust with powdered sugar before serving, or serve as is.
