Ribeye Steak

1 (14 ounce) ribeye
Kosher salt and black pepper, to taste
Panko Breadcrumbs
Olive oil
Cayenne
Garlic Pepper

2 pounds Brussels sprouts, sliced in half
4 slices bacon, cut into 2 inch pieces
Matheson Food Co. Pep Pep Caesar, or Caesar Salad Dressing of choice
Parsley
½ red onion, sliced
Lemon juice and zest
Parmesan

Preheat airfryer to 400F. Season the room temperature steak with salt and pepper. Add steak to airfryer and cook for 15 minutes or until desired internal temperature. Set aside to rest at room temp for 5-10 minutes.

Cut bacon into 2-inch pieces and cook until brown and crispy. Place on a paper towel lined plate.

Dice a red onion. Add slices to a small bowl then add lemon juice, pinch of salt, and sugar. Mix to combine. Set aside while steak and brussels sprouts cook.

Cut the brussels sprouts in half. Add to the airfryer at 400F for 15 minutes.

Mix spices together in a small bowl. Add breadcrumbs to olive oil and fry until golden brown then strain oil into a heatproof bowl. Mix fried breadcrumbs and spice mixture together until the spice is fully incorporated.

To a large bowl, mix the cooked brussels sprouts with a little bacon fat, vinegar from the onions, fried breadcrumbs, onions, chopped parsley, bacon, and Caesar salad dressing. Transfer to a plate and serve.
