Coconut Curry Soup

1 whole coconut
1 cup coconut water
1 carrot
1 spring onion
1 capsicum
1 slice of cabbage
1 wedge of lemon
1 fresh date
1 piece of ginger (about the size of a pinky)
1 small chili
2 handfuls of cashews
black pepper
rock salt
fresh coriander
vegetarian stock
cucumber (for noodles)

Start by using a whole coconut and pour in about 1 cup of coconut water.

Scoop out the coconut flesh using a spatula and add it to the blender.

Add a whole washed carrot into the blender without peeling.

Add a spring onion, including the roots.

Add a capsicum, including the stem and seeds.

Add a slice of cabbage into the mixture.

Squeeze in a wedge of lemon for bitterness and nutrition.

Add a pitted fresh date for sweetness.

Add a piece of ginger about the size of your pinky for flavor.

Add a small amount of chili for heat.

Add a couple of handfuls of cashews to create a creamy texture.

Season with black pepper and rock salt to taste.

Add a handful of fresh coriander into the mixture.

Prepare cucumber noodles using a spiralizer and place them in a bowl.

Add vegetarian stock to the blender.

Lock the lid onto the Vitamix and set it to the soup setting for 5 minutes and 45 seconds, starting on speed 5.

After blending, remove the lid and let the steam escape from the hot soup.

Pour the soup over the cucumber noodles in the bowl.

Garnish with red capsicum and coriander leaves, and add a little black pepper if desired.
