Mix flour, salt, and sugar in a large bowl.
Dissolve yeast in warm water and let sit until frothy, about 5 minutes.
Combine yeast mixture with flour mixture and mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth.
Add oil and knead for another 5 minutes until incorporated.
Cover the dough with a damp cloth and let rise in a warm place until doubled, about 1 hour.
Preheat the oven to high heat, around 475°F (245°C).
Divide the dough into equal portions and shape each into a ball.
Roll out each ball into an oval shape, about 1/4 inch thick.
Brush the tops with milk or yogurt and sprinkle with sesame or poppy seeds.
Place the bread on a baking sheet or directly on a hot baking stone.
Bake for 10-15 minutes until golden brown and puffed up.
Remove from the oven and brush with melted butter, if desired.
Let cool slightly before serving.
