Irish Potato Bread

400 grams cooked potato
80 grams all-purpose flour
1/3 teaspoon salt
50 grams melted butter

Cook 400 grams of potatoes in salted water until tender, then let them cool completely.

Pass the cooled potatoes through a potato ricer or mash them with a masher until smooth.

Add 80 grams of all-purpose flour and 1/3 teaspoon of salt to the mashed potatoes.

Pour in 50 grams of melted butter and mix everything together until combined.

Place a piece of baking paper on a surface and generously flour it.

Shape the potato mixture into a round about the size of your frying pan, and about the thickness of a smartphone.

Preheat a pan on medium heat and add a little flour to the pan.

Carefully place the shaped potato round into the pan and cook for about 5 minutes without disturbing it.

After 5 minutes, gently flip the potato round using a spatula, being careful as it may break.

Cook the other side for another 5 minutes until golden brown.

Remove from the pan and place on a cooling rack.

Cut the cooked round into four pieces using scissors for easier handling.
