1 pound cooked potatoes
1 ounce self-raising flour
1/2 teaspoon salt
butter or dairy-free spread (optional)
bacon (for cooking)
Kerrygold butter (for serving)

Take 1 pound of already cooked potatoes that have been roughly mashed.

Add 1 ounce of self-raising flour to the mashed potatoes.

Use a potato masher to mash the potatoes through the flour until combined.

Mix the mashed potatoes and flour together until it forms a dough.

Sprinkle in about 1/2 teaspoon of salt and knead into the dough.

Divide the dough into two portions to make two rounds of potato bread.

Shape each portion into a circle about 1 centimeter thick.

Cut each circle into four quarters.

Heat a pan with bacon fat over medium heat.

Place the potato quarters into the pan and cook until golden brown, flipping as needed.

Wrap any leftover dough tightly in cling film and refrigerate for later use.

Serve the cooked potato bread with a knob of Kerrygold butter and bacon on top.
