Irish Potato Bread

3 medium-sized potatoes
170 g plain flour
1 teaspoon salt
1 teaspoon baking powder
black pepper (to taste)
butter (amount not specified)

Wash, peel, and dice the potatoes.

Boil the diced potatoes in cold water for 25 minutes.

In a large bowl, combine 170 g of plain flour, 1 teaspoon of salt, 1 teaspoon of baking powder, and a touch of black pepper.

Drain the boiled potatoes and mash them with butter until grainy.

Let the mashed potatoes cool for about 15 minutes.

Add the cooled mashed potatoes to the flour mixture and mix slowly to form a dough-like texture.

If the dough is tacky, sprinkle more flour on top and mix until it is no longer sticky.

Flatten the dough to about half a centimeter thick.

Heat a dry pan and cook the flattened dough for 5 minutes on each side until golden brown.

Once cooked, place on a plate and optionally store in an airtight container in the fridge.

Add 2 tbsp of olive oil to the pan and fry the bread for 1-2 minutes on each side until crispy.
