Gluten-Free Chocolate Chip Cookies

3 sticks butter
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
2 teaspoons vanilla extract
2 teaspoons xanthan gum
2 teaspoons salt
2 teaspoons baking soda
2 cups Bob's Red Mill 1-to-1 gluten-free baking flour
1 bag chocolate chips

Let the butter sit at room temperature until soft.

Add 3 sticks of soft butter to the mixing bowl and mix on low speed until softened.

Scrape down the sides of the bowl and paddle attachment.

Add 1 cup granulated sugar and mix until light and fluffy.

Add 1 cup light brown sugar and mix until fully incorporated.

Add 2 large eggs one at a time, mixing each until fully incorporated.

In a separate bowl, combine 2 teaspoons xanthan gum, 2 teaspoons salt, and 2 teaspoons baking soda with 2 cups gluten-free flour.

Add the dry mixture to the wet mixture and mix until combined.

Add 1 bag of chocolate chips and mix until fully combined.

Divide the dough in half and refrigerate for a minimum of 2 hours, preferably longer.

Scoop the dough onto baking sheets and bake until golden brown.
