Calamari Stuffed with Pancetta and Vegetables

Parmesan cheese

Nutritional yeast is dairy-free and adds umami, while pecorino is often less expensive.
Preheat the grill on medium heat.
Add 3 tablespoons of olive oil to a hot pan, coating the bottom and sides.
Reduce heat to medium-low and add small cubes of pancetta, grated onion, chopped celery, grated carrot, grated garlic, fresh rosemary, chopped fennel bulb, and chopped calamari tentacles.
Cook for 5-6 minutes until vegetables are translucent and pancetta is cooked but still soft.
Remove rosemary twigs and transfer stuffing to a mixing bowl with cubed keto buns.
Add ground black pepper and any leftover oil from the skillet to the mixing bowl and toss to combine.
Allow stuffing to cool to room temperature.
Pat dry the calamari tubes before stuffing.
Use a teaspoon to fill each calamari tube with stuffing, about 2/3 full, using fingers to push stuffing down.
Seal the opening of each tube with a toothpick.
Heat a grill pan over medium heat and add olive oil, then reduce to low.
Place stuffed calamari tubes perpendicular to the grilling ridges and cook for 5-6 minutes on each side until done.
Remove from heat and place on a platter, drizzle with lemon juice and olive oil, and garnish with fennel leaves and lemon wedges.
