1 lb ground turkey
1 medium onion
1 medium green bell pepper
3 cloves garlic
6 oz tomato paste
2 tablespoons white vinegar
1 tablespoon Goya seasoning
1 tablespoon complete seasoning
1 teaspoon ground cumin
1 teaspoon oregano
1 tablespoon sugar

Heat a medium low aluminum pot on the stove.

Add ground turkey to the pot (can use ground beef instead).

Chop half to a whole onion, half a green or red bell pepper, and about five to six garlic cloves in a food processor.

Once the meat is browned, push it to the side of the pot.

Add the onion, bell pepper, and garlic mixture to the pot and sauté until fragrant.

Combine the sofrito with the meat in the pot.

Add tomato paste (or tomato sauce) and a little water to the pot.

Add a splash of white vinegar to the mixture.

Season with Goya seasoning and complete seasoning, adjusting salt as needed.

Add ground cumin and oregano to taste.

Add a pinch or two of sugar to the mixture.

Taste the sauce and adjust seasoning if necessary.

Turn off the heat and cover the pot until ready to serve.
