In a bowl, combine two types of mince meat (15% and 20% fat).
Add marzimala cheese mix and red leicester cheese to the bowl.
Finely chop one onion, dice one tomato, and prepare four cloves of garlic.
Add one teaspoon of fresh thyme to the mixture.
Season the mince meat with one teaspoon of garlic powder, black pepper, smoked paprika, onion powder, and all-purpose seasoning, mixing well with hands.
Heat three tablespoons of olive oil in a skillet over medium heat.
Add the chopped onion and minced garlic to the skillet and sauté for about one minute, ensuring it doesn't burn.
Add the diced tomato and one teaspoon of seasoning to the skillet and stir.
After a few seconds, add the seasoned mince meat to the skillet, mashing it down.
Cook the mince meat for three minutes, allowing it to release water.
Add fresh thyme leaves and one to two tablespoons of dark soy sauce to the skillet.
Stir in the remaining seasoning, including one teaspoon of smoked paprika.
Remove excess fat from the skillet while cooking the mince meat.
Add two tablespoons of ketchup and a small amount of browning sauce for color.
Optionally, add half a teaspoon of jerk seasoning and one teaspoon of roast sauce.
Keep stirring the mixture, ensuring it doesn't become too liquidy, and cook until no liquid remains.
Turn off the stove and cover the skillet to keep the mince warm.
In a separate flat pot, add the fat from the cooked mince meat to heat.
Brush the fat over the surface of the pot and add the tortillas, cooking for a few seconds on each side.
Add a small amount of the mince meat filling to one side of the tortilla, followed by cheese.
Fold the tortilla over and press down, adding more oil if necessary.
Cook until the cheese melts and the tortilla is golden brown, then remove from the pot.
Repeat the process for additional tortillas, adding two at a time if desired.
Plate the tacos and garnish with lime and optional parsley for presentation.
