Today, variations abound, with some incorporating chocolate or different spices, but the classic version remains a cherished staple in many households during the fall season.

Preheat the oven to 375°F (190°C) and line a 10 by 15 inch baking dish with parchment paper.
In a medium bowl, sift together 3/4 cup all purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/2 teaspoon allspice, and 1/4 teaspoon freshly grated nutmeg.
In a stand mixer, combine 3 room temperature eggs and 1 cup granulated sugar. Beat until lighter in color and smooth, then add 2 teaspoons vanilla extract.
Mix in 2/3 cup pumpkin puree until just combined.
Fold in the dry ingredients until fully incorporated, using a whisk to finish mixing if needed.
Pour the batter into the prepared baking dish and spread it out evenly, ensuring a smooth finish.
Bake for 13 to 15 minutes, until the cake is puffed up, slightly golden, and springy to the touch.
While the cake is baking, prepare a thin kitchen towel by dusting it with 1/4 cup powdered sugar.
Once the cake is done, invert it onto the sugared towel and carefully lift off the parchment paper.
Roll the cake tightly in the towel and let it cool completely.
To make the cream cheese filling, sift 1 cup powdered sugar into a bowl and add 1 (8 ounce) package of room temperature cream cheese and 6 tablespoons of room temperature unsalted butter. Mix until smooth.
Add 2 teaspoons of vanilla extract and mix until light and fluffy.
Unroll the cooled cake and spread the cream cheese filling evenly over the surface.
Re-roll the cake without the towel and wrap it in plastic wrap. Chill in the refrigerator for at least 1 hour.
After chilling, unwrap the cake and trim the edges with a damp serrated knife for clean slices.
Dust with powdered sugar just before serving.
