2 tablespoons vinegar

Make a maida dough.

Cover the dough with enough water to separate starch and gluten.

Squeeze the dough in the water to separate starch and gluten.

Cover the starch water for 2-3 hours; use the gluten for fillings.

Wash the gluten in running water.

Add 1/2 tsp of yeast or baking powder to the gluten and mix; let it rest for 5-10 mins.

Place the gluten on a greased steamer tray and cook for 15-20 mins.

Prepare the chilli paste with chopped garlic, red chilli powder, salt, Sichuan pepper, ajino moto, and water; mix and add 100ml heated oil.

Strain the starch solution, add 1/2 tsp of turmeric or yellow food color, and mix with some oil to make the batter.

Grease a plate and add batter; steam for 4-5 mins.

Cool the plate in cold water and remove the wrapper.

Spread 1 tsp of chilli paste on the wrapper, add gluten bread, salt, soy sauce, and vinegar; mix and roll up.

Cut into equal pieces.
