Spiralize the celery root to create noodles.

Add salt to boiling water from a height for presentation.

Add the celery root spaghetti to the salted water and cook.

In a food processor, add leftover celery root scraps and blend with butter and a little salt to make celery root butter.

Strain the cooked celery root spaghetti in a colander.

Return the spaghetti to the pan with a little of the cooking liquid and add the celery root butter.

Finish the dish by adding Pecorino cheese and black pepper to the pan with the spaghetti.
