120gr. Spaghetti
120/150 gr. of Guanciale
2/3 of a can POLPA DI POMODORO (finely chopped tomato)
4 Tbsp Pecorino Romano
Pepper

Put the guanciale straight on to the pan and let it crisp up in its own released fat.

When crisp, drain it out and put on the side.

Pour the tomatoes straight into the fat left in the pan.

Add some black pepper to the sauce.

Salt the water and drop the spaghetti.

Cook in boiling water until very very aldente.

Finish into the sauce for the last few minutes, with a little of the pasta cooking water.

Turn the pan off.

Stir through some of the cheese and 1/4 of the crispy guanciale.

Plate up, garnish with more cheese and the rest of the guanciale on top.
