Toasted almonds add crunch without the cost.
Add 1 cup of milk (200 milliliters) to the mixer.
Add 14 grams of dried instant yeast to the milk.
Add 100 grams of sugar (set aside 50 grams for filling).
Add 120 grams of softened unsalted butter to the mixture.
Melt 300 grams of papelon (or piloncillo) with 1/4 cup of water and add to the mixer.
Add 2 tablespoons of honey to the mixture.
Add 2 teaspoons of vanilla essence to enhance flavor.
Add 2 eggs to the mixture and beat together with the yeast and milk.
Add 800 grams of all-purpose flour to the mixture.
Sprinkle 1 teaspoon of salt on top of the flour, ensuring it does not touch the yeast.
Once the dough reaches the desired texture, add 1 tablespoon of anise seed.
Knead the dough until it is very soft and uniform in texture.
Clean the work table to prepare for rolling out the dough.
Roll the dough into a rectangular shape, approximately 1 centimeter thick.
Prepare the filling: have 400 grams of grated mozzarella cheese ready.
Spread melted papelon (or piloncillo) over the rolled dough.
Add the remaining 50 grams of sugar to the filling.
Sprinkle 1 tablespoon of cinnamon over the filling.
Roll the dough from the far end towards you to form a log shape.
Cut the edges of the log if they have little filling.
Divide the log into halves, then cut each half into 8 portions to make 16 golfeados.
Transfer the golfeados to a greased tray or one lined with parchment paper.
Flatten each golfeado slightly and leave space between them on the tray.
Cover the golfeados with a cloth and let them rest for 1 hour and 20 minutes to 1 hour and 30 minutes to rise.
Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius).
Bake the golfeados for approximately 25 to 30 minutes.
Remove the golfeados from the oven once they are golden and caramelized.
