Open and drain 2 cans of white beans and add them to a mixing bowl.
Cube an English cucumber and add it to the bowl.
Halve 10 to 12 ounces of cherry tomatoes and add them to the bowl.
Chop 4 green onions (both whites and greens) and add them to the bowl.
Chop about 1 cup of fresh parsley and add it to the bowl.
Chop 15-20 mint leaves and add them to the bowl.
Zest 1 large lemon and then juice it, adding the juice to the bowl.
Add 1 teaspoon of za'atar, 0.5 teaspoon of sumac, and 0.5 teaspoon of Aleppo pepper to the bowl.
Add kosher salt and black pepper to taste.
Drizzle extra virgin olive oil over the salad and mix everything together.
Transfer the salad to a serving bowl, using a plate underneath if needed for presentation.
Sprinkle feta cheese over the top if desired.
