Drain the can of white beans but do not rinse them.
Chop the red onion and squeeze a little lemon juice over it, letting it sit while you prep the other ingredients.
In a serving dish, combine the drained white beans, chopped red onion, squeezed lemon juice, wine vinegar, extra virgin olive oil, dry herb de Provence, and the finely chopped herbs (rosemary, tarragon, thyme, and lavender).
Season the mixture with salt and freshly ground pepper to taste.
You can serve the salad right away, but it's recommended to chill it for a few hours for better flavor melding.
This salad will last a couple of days in the refrigerator.
