In a large pot over low heat, add 75 ml of water and 400 grams of caster sugar.
Mix to incorporate the water with the sugar until dissolved.
Add 60 grams of cubed butter and 25 ml of golden syrup, mixing until the butter has melted.
Add in one can of sweetened condensed milk and stir continuously for 10-15 minutes.
To check if the mixture is ready, drop a bit into cold water; it should form a soft ball.
Add 1 teaspoon of vanilla essence and mix to incorporate.
Remove from heat and place the pot into a sink full of cold water, continuing to stir for 3 minutes.
Pour the mixture into a baking pan and cut indentations into the fudge before it cools completely.
Once cooled, cut again through the indentations.
