1

Start by preparing the ingredients: 5 pieces of hen (thighs and legs) and 2 chicken feet for flavor and collagen.

2

Chop 2 potatoes into two batches; the first batch goes in with the hen for color and flavor, the second batch will be added halfway through cooking.

3

Add 2 stalks of celery (broken) and 2 cloves of garlic to the pot.

4

In a large pot, add 3 liters of water and the hen pieces along with the chicken feet.

5

Season with a bit of salt, cover the pot, and cook for at least 1 to 1.5 hours until the hen is tender. If using a pressure cooker, the cooking time will be shorter.

6

After the hen is cooked, add the second batch of potatoes and noodles to the pot.

7

Season with a bit more salt and a pinch of oregano, then cook for 8 to 10 minutes until the potatoes and noodles are cooked.

8

While the soup is cooking, prepare a spicy sauce by grating half a clove of garlic, adding a bit of rocoto, and mixing in chopped cilantro and green onion.

9

Season the sauce with salt, pepper, and lime juice to taste, and optionally add a bit of broth for flavor.

10

Once the potatoes and noodles are cooked, beat 2 egg yolks with a bit of broth and incorporate into the soup for added consistency and flavor.

11

Turn off the heat and serve the caldo de gallina hot, garnishing with a piece of hen, a potato, and a boiled egg. Add green onion and the spicy sauce on the side.
