Separate 4 egg yolks from the whites and set the whites aside.

In a bowl, whisk together the egg yolks and 1/2 cup (100 grams) of sugar.

Whisk in 1/3 cup (50 grams) of tipo '00' flour until you have a thick yellow paste.

In a separate pot, heat 2 cups (500 ml) of full fat (whole) milk with the zest of one whole lemon on medium-high until it has tiny bubbles around the edge.

Add about 1/4 of the hot milk to the egg mixture and stir to combine.

Slowly add the rest of the hot milk to the egg mixture while whisking continuously.

Turn the stove to medium heat and whisk constantly until the custard starts to bubble, then turn off the heat.

Check the custard's consistency by dipping a spoon into it and running your finger down the back; if it doesn't fill in the gap, it's ready.

Pour the custard into a bowl set in another bowl with ice cubes to cool it down, whisking until it reaches room temperature.
