Nigerian Fried Rice is a beloved dish that originated from the need to create a festive meal using local ingredients. Traditionally served at celebrations and gatherings, it embodies the vibrant flavors of Nigeria, combining rice with vegetables and spices. Today, it has gained popularity beyond Nigeria, with variations appearing in various West African cuisines and among the diaspora, reflecting the adaptability and creativity of home cooks.

Season the fish with 1 chopped onion, 1 teaspoon dry thyme, 1/2 stock cube, 1 teaspoon salt, and 1 teaspoon curry powder.
Add 1/2 teaspoon nutmeg and 1 teaspoon chili pepper (optional).
Add 1/2 liter of water, mix well, cover, and cook for 10 minutes on high heat.
Clean the rice until the water runs clear, then parboil the rice for 10 minutes on high heat.
Remove the bones from the cooked fish and crush it slightly with hands.
Drain the parboiled rice and cool it with water.
Add 1/2 cup of oil to a pot and heat it.
Add 2 diced spring onions and fry for 1 minute.
Add 2 tablespoons of dry thyme and mix well.
Add diced red, yellow, and green bell peppers and stir.
Add the cooked fish and stir again.
Add 4 tablespoons of curry powder, 3 stock cubes, 1/2 tablespoon of salt, and 1/2 tablespoon of chili pepper (optional).
Stir well and add mixed veggies (carrots and peas).
Cover and cook on medium heat for 2 minutes.
Add the parboiled rice and mix thoroughly to combine all ingredients.
Taste the rice to ensure the flavor is right.
Add 1/2 cup of water, cover the pot, and turn the heat down to low.
Steam the rice for 10 minutes on low heat.
After 10 minutes, add more diced bell peppers and peas, stir, and cover again.
Allow to steam for another 5 minutes before serving.
