Start by making the syrup: combine 3 cups water, juice of 1/2 lemon, 2 cups sugar, 5 cloves, and 1 cinnamon stick in a pot and bring to a boil.

Add 1 tbsp honey to the syrup mixture and mix well, then leave it to cool down.

For the custard, in a pot, combine 2 L milk, 1 tsp vanilla, and 4 eggs and beat them together.

Add 2 cups sugar and 1 cup semolina to the custard mixture.

Cook the custard on medium heat, stirring continuously to prevent burning, until it thickens, then turn off the heat and add 100 g unsalted butter.

Prepare a baking dish by greasing the bottom with melted butter.

Take one sheet of fillo pastry, place it in the dish allowing the edges to hang over, and brush it with melted butter.

Repeat this process with another sheet of fillo pastry on the other side, brushing each with butter.

Continue layering 10 sheets of fillo pastry, brushing each with melted butter.

Pour the custard mixture into the dish.

Fold the overhanging edges of the fillo pastry over the custard to close it.

Repeat the layering process on top with 10 more sheets of fillo pastry, brushing each with melted butter.

Cut the top with a knife into squares, making sure not to cut through the bottom.

Bake in the oven at 180°C for 1 hour.

Once baked, pour the cold syrup over the hot galaktoboureko and let it sit for a couple of hours before serving.
