Cut the ends off the lemongrass and bash it.

Finely chop the lemongrass.

Chop a couple of cloves of garlic and add them to the lemongrass.

Finely chop one large red chilli and add it in with the lemongrass and garlic.

Prepare a steam tray that fits inside a steam basket.

Place one layer of sea bass fillet in the steam tray, then add the lemongrass, garlic, and chilli mix on top of the fillet.

Cover the fillet with the finely chopped lemongrass, garlic, and chilli mixture.

Place the steam tray into the steam basket and steam for seven minutes.

In a bowl, combine Lee Kum Kee's Oriental Sesame Dressing, sesame oil, soy sauce, garlic, chilli, and a touch of rice vinegar.

Add a couple of tablespoons of the dressing mixture to the bowl.

Add a tablespoon of Lee Kum Kee Premium Light Soy Sauce for saltiness.

Squeeze in lime juice to enhance the lemongrass flavor.

Add a couple of teaspoons of sugar and some hot water to the mixture to dissolve the sugar.
