Pour the 2L pasteurized whole milk into a deep pot.
Heat the milk on medium, gently stirring until it turns lukewarm.
Turn off the heat and add ½ cup vinegar.
Stir in the vinegar for about 30 seconds until it evenly mixes with the milk and starts to curdle.
Cover and let it rest for 10 minutes.
Drain the curds over a colander and squeeze gently to remove excess liquid.
Place the ball of cheese in a bowl.
Use the microwave to heat the cheese starting with 30 seconds.
Stretch and fold the cheese until it becomes smooth and stretchy.
Add salt if desired, then microwave for another 20 seconds.
Shape the cheese into a ball.
Dip the cheese ball in ice-cold water and let it rest for 2 minutes to set completely.
