Beat 10 eggs together until creamy with no thick chunks.
In a large cup, mix 1.5 teaspoons of mustard powder with a little bit of milk to avoid clumping, then add the rest of the 3 cups of milk and mix.
Add 1 teaspoon of kosher salt to the egg and milk mixture and mix well.
Cut 3 slices of sourdough bread into cubes and arrange them in a single layer at the bottom of a greased 9x13 pan.
Spread 0.5 pound of ham evenly over the bread layer.
Sprinkle 0.5 pound of cooked and drained sausage across the ham.
Add 0.25 cup of chopped green onions on top for color.
Sprinkle 0.75 cup of shredded cheddar cheese over the mixture, reserving the other 0.75 cup for later.
Add 0.33 pound of cooked bacon on top, saving the remaining bacon for later to maintain its crunch.
Pour the egg and milk mixture over the layered ingredients, ensuring even coverage.
Sprinkle smoked paprika on top without mixing it in, allowing individual servings to add pepper or hot sauce as desired.
Cover the casserole and refrigerate overnight to soak.
The next morning, preheat the oven to 350 degrees Fahrenheit and sprinkle the remaining 0.75 cup of cheddar cheese on top before baking.
Bake for about 55 minutes until golden and melted, checking doneness with a toothpick.
Let the casserole rest for 10 minutes after baking.
Top with the remaining bacon and freshly cut parsley before serving.
