Cream together 125 grams of soft unsalted butter and 175 grams of light brown sugar in a mixer for a couple of minutes.

Add 80 grams of golden syrup and 1 large egg to the mixture and mix until smooth.

Add 350 grams of plain flour, 1 teaspoon of baking powder, a pinch of salt, 1 rounded teaspoon of ginger, 1 rounded teaspoon of cinnamon, and a pinch of nutmeg and cloves to the mixer.

Mix until it forms a dough and let it rest in the fridge for about 30 minutes to an hour.

Roll out the dough to about 4 millimeters thick on a floured surface.

Cut out shapes using cookie cutters and place them on a baking tray with space between each cookie.

Preheat the oven to 170 degrees C with a fan and bake for 10 minutes until golden.

Let the cookies cool before decorating with royal icing made from 400 grams of icing sugar, 15 grams of egg white powder, and 4 tablespoons of water.
