1

Welcome to Marie's Kitchen. Today we're making cilantro lime rice.

2

Use 1 cup of royal basmati rice, which is a long grain rice.

3

Rinse the rice in a fine mesh strainer under cool water until it runs clear, or just give it a good rinse.

4

Pat the rinsed rice dry with a dish towel.

5

Heat a thick core pot over medium-high heat.

6

Add about 1 tablespoon of olive oil to the pot.

7

Add 1 clove of garlic to the oil and cook until golden brown, being careful not to burn it.

8

Add the rinsed rice to the pot and toast it in the oil for about 2 minutes, stirring continuously.

9

Add 2 cups of water and 1 teaspoon of salt to the pot and stir.

10

Bring the mixture to a boil, watching for bubbles.

11

Once boiling, cover the pot with a lid and reduce the heat to low.

12

Set a timer for 20 minutes and let it cook without lifting the lid.

13

After 20 minutes, turn off the heat and let the rice sit covered for about 10 minutes.

14

Remove the lid and fluff the rice with a fork, transferring it to a bowl for easier tossing.

15

Add lime juice to the rice and toss to combine.

16

Add about 2-3 tablespoons of chopped cilantro and toss again.

17

Garnish with additional cilantro and lime wedges before serving.
