Rinse rice under cold running water until all starch is removed and let it drip dry.

Add 1 tablespoon of olive oil and 1 tablespoon of butter to a pan and melt over medium heat.

Sauté chopped onion in the pan for about 30 seconds until softened.

Add 1 minced garlic clove to the pan and sauté for another 30 seconds, being careful not to burn it.

Add 1 cup of rinsed basmati rice to the pan and stir to coat it with the oil and butter without browning it.

Pour in 1 and 1/2 cups of water, then add 1/2 teaspoon of white pepper, 1 teaspoon of chicken bullion, and 1 bay leaf. Stir to combine.

Zest the lime, being careful not to include the bitter white part, and add the zest to the pan. Stir again.

Cover the pan and bring to a simmer, cooking for about 15 minutes.

After 15 minutes, remove from heat and fluff the rice with a fork, noting it will still be wet.

Cover the rice again and let it sit for an additional 15 minutes to become fluffy.

Remove the lid, discard the bay leaf, and check the fluffiness of the rice.

Squeeze half of the lime juice over the rice and add the chopped cilantro. Toss to combine evenly.
