Start by chopping 1 small white onion: cut off the end, halve it, peel, and dice.

Dice about 1/4 of a red bell pepper for the rice and set aside more for garnish.

In a pot, heat 2 tablespoons of olive oil and add the diced onion and bell pepper.

Add 4 cloves of minced garlic and about 1.5 teaspoons of kosher salt, stirring until fragrant and the onions become translucent.

Zest 2 limes directly into the pot, being careful of steam, and mix well.

Add rice (creator uses brown rice) to the pot, stirring until it starts to show chalky spots from the oil.

Pour in a total of 4 cups of water and stir, then add another 1.5 teaspoons of kosher salt and stir again.

Bring the mixture to a boil, then add 2 teaspoons of coriander and 1 teaspoon of cumin, stirring gently.

Once boiling, cover the pot and reduce heat to low, cooking for about 20 minutes until the water is absorbed.

After 20 minutes, check the rice; if most of the liquid is gone, add in about 1/2 cup of chopped cilantro and 2 chopped green onions.

Mix in about 3 tablespoons of lime juice and 1 teaspoon of sugar, stirring gently to avoid making the rice sticky.

Let the rice sit for another minute before serving.
