Rinse 1 cup of jasmine rice under cold water until the water runs clear, then set aside to drip dry.

In a skillet, add 1 tablespoon of olive oil and 1 tablespoon of butter.

Add 1/4 cup of finely chopped onions and sauté for about 30 seconds until translucent.

Add the rinsed rice to the skillet and cook until it becomes a little opaque, about 2-3 minutes.

In a measuring cup, dissolve 2 teaspoons of chicken bouillon in 1 and 3/4 cups of very hot water and set aside.

Add 1 large minced garlic clove to the skillet and stir for about 30 seconds to release its flavor.

Add the dissolved chicken bouillon, 2 small bay leaves, a pinch of pepper, and the zest of 1 lime to the skillet, stirring to combine.

Cover the skillet and bring the mixture to a boil, then reduce the heat to the lowest setting and cook for about 15 minutes or until all the liquid is absorbed.

After 15 minutes, turn off the heat and let the rice sit covered for an additional 15 minutes to steam.

Remove the bay leaves from the rice and transfer the rice to a casserole dish.

Add chopped cilantro (1/3 to 1/2 cup) and the juice of 1 lime to the rice, mixing gently to combine.
