Orange Creamsicle Cheesecake

Crush graham crackers until you have 3 cups.
Melt 12 tablespoons of butter.
Mix crushed graham crackers with melted butter and 2/3 cup of sugar.
Press the mixture into the bottom of a springform pan.
Refrigerate the crust for about 30 minutes to set.
In a mixer, combine 2 packs of cream cheese with 1/2 cup of sugar and mix until smooth.
Transfer the cream cheese mixture to a separate bowl.
In the mixer, pour in 2 cups of heavy whipping cream and add 2 teaspoons of vanilla.
Whip the cream until stiff peaks form (about 4-5 minutes).
Fold the whipped cream into the cream cheese mixture gently.
Separate about a third of the mixture for the bottom layer.
Dissolve 1 tablespoon of gelatin in 1/4 cup of hot water.
In the remaining cream cheese mixture, add the zest of an orange, 1/2 cup of orange juice, and the dissolved gelatin.
Mix until combined and adjust color with food coloring (adding drops of yellow and red).
Spread the vanilla cream cheese layer over the chilled graham cracker crust.
Pour the orange layer on top of the vanilla layer and smooth it out.
Refrigerate the cheesecake for about 3-4 hours to allow the gelatin to set.
Unmold the cheesecake and transfer it to a serving platter.
Top with Cool Whip before serving.
