Chicken Vesuvio

Gather ingredients: oregano, thyme, crushed red pepper, black pepper, pink Himalayan salt, olive oil, chicken stock, thawed peas, lemon, parsley, red potatoes, garlic, butter, white wine, chicken thighs.

Heat a large pan on the stove and add 1/4 cup of olive oil.

Season chicken thighs with salt and pepper and place them skin-side down in the heated pan.

Cook chicken for about 10 to 12 minutes, flipping after 6 minutes to cook the other side.

Remove chicken from the pan and set aside.

Add 2 pounds of chunked red potatoes to the pan, season with pink Himalayan salt and black pepper.

Add 1 tablespoon of oregano, 2 teaspoons of thyme, and 1 teaspoon of crushed red pepper to the potatoes.

Cook potatoes for about 10 minutes, tossing occasionally.

Chop 7 cloves of garlic and add to the pan, cooking for about 1.5 minutes until fragrant.

Add 2 tablespoons of butter, 3/4 cup of dry white wine, and 1/2 cup of chicken stock to deglaze the pan, cooking for 4 to 5 minutes.

Add 12 ounces of thawed peas to the mixture and stir.

Return the chicken to the pan, pushing it down into the potatoes and peas.

Preheat the oven to 375°F and transfer the pan to the oven for 20 to 25 minutes.
