Chicken Vesuvio

4 chicken thighs, bone-in and skin-on
2 cups baby potatoes, halved
4 cloves garlic, minced
1 lemon, juiced
4 cloves garlic, grated
1 tsp dried oregano
1 tsp dried thyme
1/4 cup fresh parsley, chopped (for garnish)
1/2 tsp black pepper
Salt and pepper to taste
1/2 cup dry white wine

Season the chicken with salt and black pepper on both sides.

Season the potatoes with salt and black pepper.

Combine grated garlic and lemon and set aside.

Heat oil in a pan and fry the chicken skin-side down until golden brown.

Once the chicken is golden brown, add oregano and thyme on top.

Turn the chicken over and also turn the potatoes, keeping the brown side up.

Pour dry white wine into the pan before transferring it to the oven.

Preheat the oven to 415 degrees Fahrenheit and cook for 20 minutes.

After 20 minutes, remove the chicken and potatoes from the oven.

Transfer the gravy to a pot and mash the sliced garlic into it.

Boil the gravy and add the lemon and garlic mixture along with parsley.
