1 packet (20g) Kuromitsu (black sugar syrup)

In a microwave-safe bowl, combine the warabi mochi powder with 300ml water. Stir well until no lumps remain. Add sugar (20g–65g) now if using.

Cover loosely with plastic wrap and microwave for 2 minutes.

Remove and stir thoroughly with a spoon.

Microwave for 1 minute, then stir again.

Microwave for 1 more minute. If white patches remain, heat in 10–20 second bursts until it turns into a thick, syrupy paste (it won’t be fully translucent).

Pour the mixture into a flat container.

Place the container in a large bowl of cold water (add ice for faster cooling). Let it sit for 20–30 minutes until firm.

Remove from the container, cut into bite-sized pieces, and dust with kinako.

Drizzle kuromitsu just before eating to keep the mochi soft and jiggly.
