Jamaican Oxtail with Butter Beans and Spinners

1.5 tbsp all-purpose seasoning
1 tbsp oxtail seasoning
1 tbsp jerk powder seasoning
1 tsp black pepper
1 scotch bonnet pepper
1 tsp browning
1 tsp wet jerk marinade

Season the oxtail with scallion, allspice, garlic, ginger, thyme, onion, sweet peppers, tomato, carrot, scotch bonnet pepper, browning, wet jerk marinade, and tomato ketchup. Massage the seasoning into the oxtail and let it marinate for at least an hour or overnight.

Heat a small amount of oil in a pot and sear the oxtail pieces on all sides for about 3-4 minutes until nicely browned.

Add hot water to the pot, ensuring it covers the oxtail. Season with salt and cover the pot. Cook on medium heat for about 2 hours, adding more hot water as needed to keep it covered.

After about 1 hour and 55 minutes, check the oxtail for tenderness. If tender, add the remaining onion, tomato, carrot, sweet peppers, thyme, scallion, ginger, and remaining seasoning. Mix well and add more browning if desired.

Cover and cook for an additional 5 minutes, then add the butter beans and a teaspoon of brown sugar. Mix well and let it cook for another 10 minutes until the gravy thickens.
