Autumn Spiced Leftover Turkey Noodle Soup

Toast nutmeg, cinnamon, cloves, and optional star anise in a pot over medium-low heat until fragrant, about 1 minute.
Add a generous amount of water to the pot and bring to a boil.
Add ginger if available and the skin of the leftover turkey to the boiling water.
Cover the pot and let it simmer for about 10 minutes to extract flavor from the skin.
Shred leftover turkey breast meat into pieces for the soup.
Slice onion relatively thin and add to the pot along with any remaining turkey meat.
Slice scallion greens at a slight bias and soak in cold water to help them curl.
Add optional coriander leaves and stalks, and mint if available, to the pot.
Cook your choice of noodles in boiling water, rinsing them under cold water to remove excess starch before adding them to the pot.
Season the broth with soy sauce and optional orange peel, mixing well and tasting for seasoning.
Rinse the cooked noodles and place them in a bowl.
Layer the shredded turkey on top of the noodles, followed by thinly sliced onions and scallions.
Pour the hot soup over the noodles and turkey to warm them up.
Garnish with coriander, optional hot sauce or Sriracha, and serve with lime on the side.
