Combine all ingredients in a large bowl, adding salt last.
Mix with hands to form a wet dough; use a scraper to handle the dough.
Perform a stretch and fold technique four times over 2 hours to develop gluten.
Shape the wet dough using flour to prevent sticking; place on a floured baking tray.
Preheat pans on medium-low heat; place dough in pans and cover with a lid.
Check the muffins during cooking; if not cooked, cover and return to heat.
Transfer muffins to a preheated oven at 190-200 degrees Celsius for about 4 minutes or longer, flipping them during baking for even cooking.
Remove muffins from the oven and transfer to cooling racks to allow steam to escape.
