1

Dissolve 1 ounce of fresh cake yeast in 1/2 cup of warm water and add 1/2 cup of bread flour to make a sponge; set aside to bubble and become active.

2

In a mixer, combine 2 cups of bread flour and 1/4 cup of sugar; add 1/4 cup of butter and mix until mealy.

3

Add the prepared sponge to the mixer.

4

Mix 1 egg with 1/2 cup of water in a separate bowl and then add to the mixer.

5

Add 1 teaspoon of salt last to the mixture.

6

Mix until just incorporated; do not knead the dough, as it should remain sticky.

7

Cover the dough with plastic wrap and let it rise until doubled in size.

8

Roll out half of the dough to about 1/4 inch thick on a floured surface.

9

Cut the dough into rounds using a cookie cutter or similar tool.

10

Let the rounds rise briefly before cooking.

11

Cook the muffins on a griddle until golden brown on both sides.
