Today, Pelau has gained popularity beyond its borders, with variations appearing in many Caribbean communities around the world.

Wash chicken in lime water and set aside to drain.
Season chicken with 1/2 teaspoon salt, 1/2 teaspoon crushed bay leaf, 1/2 teaspoon black pepper, and 1/2 teaspoon ground pimento; mix and marinate for 15 minutes.
In a large pot, heat 2 tablespoons of hot oil and add 1 tablespoon of sugar to caramelize for color.
Ensure the sugar dissolves completely to achieve a rich brown color.
Add marinated chicken to the pot and cook until it stiffens and obtains a rich brown color.
Add 2 cups of rice to the pot and combine well with the chicken.
Add chopped onion, sweet pepper, scallions, garlic, and ginger; combine thoroughly for 5 minutes.
Pour in 2 cups of chicken broth and ensure the water is one inch above the rice.
Add 1 cup of coconut milk, 1 cup of cooked red peas, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 whole pepper, 2 pimento leaves, and 1 sprig of thyme; cover and cook until rice is ready.
Place a wet plastic bag over the pot and add some water on top of the bag before covering; leave for another 20 minutes.
Check if the rice is fully cooked by gently turning it over with a fork; it should be light and fluffy.
