Traditionally made for special occasions and family gatherings, it combines the flavors of chicken, rice, and coconut milk, symbolizing the fusion of cultures in the Caribbean. Today, Pelau has gained popularity beyond its borders, with variations appearing in many Caribbean communities around the world.

Season the cut-up chicken with salt, black pepper, oyster sauce, and fresh green seasoning, mixing well.
Heat 6-8 tablespoons of oil in a pot until hot.
Add 2 1/2 cups of rice and 8 tablespoons of sugar to the oil, stirring until the rice is coated and caramelized to a dark brown color.
Add the seasoned chicken to the pot and brown it.
Incorporate diced onion, minced garlic, minced carrot, minced pimentos, and diced tomatoes into the pot, cooking for a few minutes.
Pour in water to cover the chicken and rice mixture, then add the pigeon peas.
Add coconut milk to the pot, stirring to combine.
Bring to a boil, then reduce heat and cover, simmering until the rice is cooked and has absorbed the liquid.
