2 tablespoons of brown sugar
1/4 cup of tamarind paste

1 cup of oil
1/2 teaspoon of salt

Soak 200 grams of red chili and remove the seeds from 30 pieces of truck chili.

Roughly chop 1 bulb of garlic and peel 20 pieces of shallots.

Add all the chilies, garlic, and shallots into the blender.

Add 2 tablespoons of brown sugar and 1/4 cup of tamarind paste to the blender.

Blend the mixture until it reaches a fine paste, adding a little oil if necessary to help blend.

Pour the blended chili paste into the hot oil.

Cook the chili paste for about 20 minutes, stirring occasionally until it changes color.

Add 1/2 teaspoon of salt to the chili paste during cooking.
