Welcome to the recipe introduction.
Show the ingredients for vegetable dim sum.
Add 1 cup of refined flour to a bowl.
Pour in 2/3 cup of hot water and mix until combined.
Use hands to mix the dough, then add a pinch of salt and mix lightly.
Let the dough cool to room temperature before adding more flour.
Prepare the vegetable filling by adding finely chopped cabbage, spring onion, broccoli, carrots, and French beans to a bowl.
Season the vegetable mixture with salt and crushed black pepper, then mix well and set aside.
Once the dough has cooled, add 4 tsp of refined flour and 2 tbsp of water to it and mix.
Knead the dough into a semi-soft consistency, adding more refined flour if necessary.
Cover the dough with a damp muslin cloth and let it rest for 30 minutes.
After resting, take a small portion of the dough and dust with cornstarch.
Roll the dough out from the sides to create a round disc.
Place a spoonful of the vegetable mixture in the center of the disc.
Fold the dough over the filling and pinch to seal, creating a half-moon shape.
Demonstrate a second shape of dim sum, called mouse dim sum, by rolling the disc and pinching it into shape.
Prepare a steaming basket lined with lettuce leaves to prevent sticking.
Heat water in a pot until boiling, then place the dim sum basket over it.
Steam the dim sum for 8 to 10 minutes until cooked through.
While the dim sum is steaming, prepare the ginger soy dip by mixing soy sauce, water, and lots of ginger in a pot.
Cook the dip for 3 to 4 minutes, then add toasted sesame seeds and sesame oil, mixing well.
After 10 minutes, check the dim sum and remove them from the steamer, noting their appearance.
Serve the dim sum hot with the ginger soy dip.
