Peel and cut the carrots into pieces.
Melt unsalted butter in a pan over medium heat.
Add the carrots to the pan and cook until soft, optionally adding a little water if in a rush.
Cover the pan with a lid to let the carrots sweat until they are soft.
Remove the pan from the heat once the carrots are cooked.
Add bell peppers, fresh garlic, and onion to the pan and sauté until translucent.
Add a little milk (evaporated milk, heavy cream, or whole milk) to the sautéed vegetables and let it come to a boil.
Add Laughing Cow cheese, grated Gouda, mozzarella, and parmesan to the mixture and let it melt.
Add garlic powder, onion powder, adobo seasoning, and complete seasoning to taste.
Mix in the cooked carrots with the cheese sauce.
Transfer the mixture to a baking pan and level it out.
Cover the mixture with additional cheese.
Bake in a preheated oven at 350°F.
