Burmese Fried Rice with Yellow Peas

Push vegetables to one side of the skillet; crack an egg into the empty space.
Scramble the egg until fully cooked, then mix with the vegetables.
Add cooked rice, soy sauce, salt, and black pepper; stir to combine thoroughly.
Cook for an additional 5-7 minutes, allowing rice to fry slightly.
Remove from heat; drizzle with lime juice and toss in chopped scallions and coriander.
Serve hot, garnished with additional lime wedges if desired.
