Once rice is cooked, fluff with a fork and gently fold in saffron water.
Add chopped pistachios, dried fruits, cinnamon, and cardamom; mix well.
Cover and let sit for 5 minutes to meld flavors.
Serve warm, garnished with fresh herbs.
