6 servings
Servings4
1 pound dried pea beans
1 fist-sized onion, coarsely chopped
6 tablespoons packed brown sugar
1/2 cup Grandma's Molasses
2 teaspoons Coleman's dry mustard
1 teaspoon salt
3/4 pound salt pork
1

The night before, sort through the dried pea beans to remove any stones.

2

Soak the beans in water overnight to soften them.

3

In the morning, drain the soaked beans and place them in a pot with fresh water.

4

Bring the beans to a boil and boil for about 20 minutes.

5

Once boiling, reduce the heat to a gentle simmer for 20 minutes.

6

After simmering, check the beans; if the husks are coming off, they are done. Reserve the cooking liquid.

7

In a bean pot, add the cooked beans and the reserved cooking liquid, covering the beans by about an inch.

8

Add the coarsely chopped onion, brown sugar, Coleman's dry mustard, salt, and Grandma's Molasses to the bean pot.

9

Place the salt pork on top of the beans, rind side up.

10

Cover the bean pot and place it in the oven.
